I. Cooking class in Hue 

* Cooking class at Thuy Bieu village
Full day excursion with cooking class at Thuy Bieu village

Pick up from your hotel at 09: 00 am. Embark on boat at Toa Kham wharf. Visit Dong Ba market and buy necessary food for cooking class with our chief.

Visit a Thien Mu pagoda – the symbol of Hue city. Back to the boat for a scenic cruise to Thuy Bieu village – famous for Green Tea fruit. Arrive Thuy Bieu, a nice walking or biking around village.

•    Visit local garden ,old ancestral temple and communicate with local people.

•    Visit incense making family to discover the daily life of local people while they are working strenuously with joy and enthusiasm.

Come back to Thuy Bieu restaurant for cooking class, you will prepare lunch by yourself with our chief’s instruction.Have lunch with Hue traditional dishes you have just cooked.

Relax by soaking your foot in medicinal herb water – a traditional therapeutic practice.
Enjoy excellent massage by blind people. Back to hotel around 02:00 pm. End of the tour.

Cooking Class at Tinh Gia Vien Restaurant. You will enjoy the Cooking Class at this restaurant - here you can attend a hands-on cooking class, preparation a classicmeal of Hue. Ms. Ton Nu Ha – Golden Hands will demonstrate you.
1:30 to 3:30PM Visit local market in Hue, and experience the amazingsights, sounds and aromas of this busy market. We will have the opportunity to interact with the local seller and purchase some ofingredients to be used in the cooking lesson later.
4:00 to 6:30 PM Starting cooking at Tinh Gia Vien House - Restaurant. Ms. Ton Nu Ha will teach you how cook the Royal Dishes.
6:30 PM Onward: We sit down and eat exactly what we have cooked. Tour ends.

II. Cooking class in Hoian

1. RED BRIDGE COOKING SCHOOL

Visit Hoian’s colourful market, and experience the amazing sights, sounds and aromas of this busy market. You will have the opportunity to interact with the local sellers and purchase some of the ingredients to be used in the cooking lesson later. Then aboard the Red Bridge boat for a leisurely cruise (25minutes) along the Hoian River to the Red Bridge Cooking School. This is a chance to view local river life.
On arrival, to explore the cooking school’s herb and vegetable garden, before learning about some of Hoian’s and Vietnam’s well-know dishes. The cooking lesson runs for about 2 hours - each dish is first demonstrated by the Red Bridge chef's, before we prepare the same dish ourself. Included in the class is a brief introduction to Vietnamese food carving (plate decoration). 
 
 
Recipes (our food contains no MSG):

3. Crispy Hoi An Pancakes with Shrimp, Herbs & a Peanut Sauce
4. Marinated Beef on a Sizzling Plate

Finish at approximately 1pm / 6.00pm – transfer back to central Hoi An.

2. MORNING GLORY COOKING SCHOOL PROGRAM

You’ll find us in an elegant old building with a French colonial style exterior and traditional Hoi An interior. We are based in the ‘old quarter’ surrounded by many  interesting buildings.  Our cooking school and Ms. Vy’s well-known Gourmet Cuisine Classes take place here.  We have an extensive selection of options on our program with something for everyone.  On the same site we have a restaurant specializing in traditional local Hoi An ‘street food’ dishes as well as authentic local home cooking. 

About your teachers ~ Ms.Vy and Ms. Lu

Ms.Trinh Diem Vy is a third generation chef in her family.  A native of Hoi An, Vy grew up in and around her parents’ and grandparents’ restaurant and noodle shop, respectively. When the first tourists began arriving in Hoi An in the early 90’s, Vy’s first restaurant. Mermaid, at No. 2 Tran Phu Street, was firmly established in guidebooks as one of the best restaurants in town. After numerous requests from tour guides and independent travelers, Vy finally agreed to share some secrets and tips from her kitchen, which led to the creation of her Gourmet Cuisine Classes. Over the years, Vy’s  classes have been featured in many guide books as well as in  The New York Times, Travel & Leisure, Le Figaro, World Food Vietnam (Lonely Planet), The Weekend Australian, The Edmonton Journal and many other publications.

Ms Vy also works as a Vietnamese food consultant helping those with cooking challenges, as well as designing party and restaurant menus.

Ms. Lu has worked with Ms. Vy since she was 14 years of age. She first worked at Mermaid Restaurant and helped Vy with the restaurant and classes there. As Ms Vy’s cooking school moved and grew larger, Ms Lu moved with her and helped her with the classes over about 6 years and now Ms Lu has been teaching herself for 5 years. Her sweet nature and enthusiasm encourage us to get into the kitchen and try to create these dishes.

Program 1: DAILY VIETNAMESE FOOD’ ~ COOKING DEMONSTRATION AND MEAL

This 45-60 minute class is ideal for anyone interested in Vietnamese cuisine with limited time. You will have an introduction into the fascinating art of Vietnamese cuisine with a brief talk about the special ingredients & utensils used, then the processes are demonstrated & you have ‘hands- on’ experience of one dish, ‘Fried Spring Rolls’ & their dip , as well as choosing herbs to accompany them. Each step in the process is explained & you get to eat each dish. You also see two dishes demonstrated ~ Green Papaya Salad & Grilled Chicken with Lime Leaves.

Program 2: DAILY VIETNAMESE FOOD’ ~ HERB GARDEN BICYCLE TOUR,  HANDS-ON CLASS AND MEAL

This 3-4 hour session is for those who want a practical hands-on gourmet experience. It includes a guided bicylce tour to the herb gardens of Tra Que Village . A talk on the art of Vietnamese gastronomy, vegetables, herbs & spices and how to prepare & use them.  The practical includes learning some cooking & cutting techniques including how to use a Vietnamese vegetable grater & knife & then you can choose to make a couple of exquisite garnishes. You will get hands-on experience of Rice Paper Rolls,  Soup with Cabbage Leaf and Shrimp Parcels, Chicken with Lime Leaves  to be grilled, Mango Salad, Crispy Hoi An Pancake.

If you would prefer a private  class this can be organised for 1-2 people at $210, 3 people at $260, 4–6 people at $310. Starts at 7.45am.

Program 3: COOKING FOR BEGINNERS TO INTERMEDIATE LEVELS’ ~ MARKET TOUR, HANDS-ON CLASS & MEAL

This 4 hour session is a rich & comprehensive gourmet experience. You start with a 1 hour market tour to learn about Vietnamese ingredients &  how to choose fresh ingredients.  Next is an intensive talk on Vietnamese food culture, nutrition, herbal remedies and cooking techniques. The hands on class includes learning some cooking & cutting techniques & how to use a Vietnamese vegetable grater & knife.  You will get hands-on experience of  Rice Paper Rolls, Soup with Cabbage Leaf and Shrimp Parcels,  Chicken with Lime Leaves to be grilled, Mango Salad, Crispy Hoi An Pancake. You will then have lunch.  Sometimes dishes change due to availability and seasons.

Program 4: CULINARY INTENSIVE FOR THE PROFESSIONAL BY MS VY $58

A 6 hour practical and theory session taught by Ms Vy .  This session is for the professional & experienced, for those who have a passion to learn real Vietnamese cooking, for those who want to add to their skills  & increase their knowledge about Vietnamese cuisine. Subjects covered include ~ choosing ingredients, information on ingredients, techniques, features of Vietnamese food, history & philosophy, nutrition and food medicine. This session will also suit those who want to solve Vietnamese cooking challenges or design menus for their restaurant.  8 Vietnamese dishes are prepared and cooked.

Advance booking & payment required. USD 58 for this session with requirement of 8 people  minimum. 

If you would prefer a private class this can be organised for 1-8 people at $450. Stars at 8.30am

Program 5: VIETNAMESE STREET FOOD COOKING ’ ~ DEMONSTRATION AND HANDS-ON CLASS

‘Street food’ is not Vietnamese daily food, but eaten as a treat. Learn about this tradition & how to make some of the dishes at our ‘street food’ counter (if you are a small group).  All ingredients are pre-prepared, you see a demonstration, then try it yourself and eat it. Recipes are given.

Booking in advance & minimum 2 people & maximum 8 required. USD 23. 1¼ -1¾ hour class including eating as you go. Classes can be held at 8.45-10am, 10.15-11.30am, 2.45-4pm & 4.15-5.30pm at the ‘street food’ cooking counter for 2-4 people. For 5 or more it will take place upstairs in the cooking school and times will need to be arranged. 

Program 6: “A TASTE OF VIETNAMESE COOKING “ ~ TALK & HANDS-ON CLASS WITH MARKET TOUR (MARKET TOUR IS OPTIONAL)

Learn about Vietnamese family life, eating customs and the women behind the family meal. Learn about fresh local seasonal ingredients, the dishes eaten and how to cook a basic Vietnamese family meal. Also learn how Vietnamese people get their nutrients and create balanced meals with a limited budget. Class includes Vietnamese cutting and cooking methods. Dishes you will cook will be according to the seasonal ingredients available and include ~ a soup, a seafood dish, a cooked vegetable dish, a pickle and rice.  Classes are held upon request and take 1½ hours.
